Use your strainer and remove this foam. You can get up to 70% of your proteins out of the wort this way. Make sure you write in your log sheet the exact time of your boil. I use a kitchen timer to start a countdown. I set this timer to 30 minutes. At 30 minutes into your boil, add your first addition of hops. Add them slowly, because the pellets contain air, which can cause a boil over.
